Sophia La Rosa Caprese Salad

4  Large vine-ripened tomatoes, sliced*

1 Cup Sophia la Rosa onion, sliced**

8 oz small mozzarella balls, cut in half

1 Avocado, sliced

1/4 Cup extra virgin olive oil

1 Tbsp red wine vinegar

1 Clove garlic, pressed

Salt and pepper to taste

Fresh basil leaves for garnish


Layer the tomatoes and onion on a platter or individual plates. Add mozzarella halves and avocado slices.

In a small bowl whisk the olive oil, vinegar and garlic until well combined and drizzle over salad. Season with salt and pepper to taste.

Garnish with fresh basil leaves.

* Substitute heirloom tomatoes or mix varieties for additional color and flavor
** Slice the onions in very thin rings and then cut the rings in quarters
