INGREDIENTS:
1 cup green bell pepper; diced
1 cup red bell pepper; diced
1 cup pineapple; diced
¼ cup red onion; diced
1 jalapeno; seeded and diced
¼ cup fresh cilantro
Juice of one lime
Salt to taste

Mix all ingredients in a medium bowl and stir
until well mixed.

SERVING SUGGESTIONS: Serve with chips, on burgers or hotdogs or over fish and chicken

SUBSTITUTIONS: Swap out pineapple for other fruit like peaches, papaya or mango. Also works great with corn and black beans. If you don't have a red pepper, just double up on the green pepper.
